What is a Dubai chocolate bar?

A Dubai chocolate bar is a rich dessert inspired by Middle Eastern flavors and textures. It’s made with high-quality chocolate and unique ingredients like crispy kataifi (shredded phyllo), pistachio cream, and a touch of tahini. This combination creates a creamy, nutty, and crunchy treat with a perfect balance of sweet and savory flavors. Loved for its indulgent taste and satisfying crunch, this bar has become a viral sensation online.

Who is the creator of the Dubai chocolate bar?

The Dubai chocolate bar was created by Emirati entrepreneur Asma Lootah, founder of The Hundred Wellness Centre in Dubai. She introduced it in 2017 as a luxury chocolate infused with 24-karat edible gold, aimed at the UAE’s high-end market.

Lootah’s goal was to craft a unique, indulgent treat that embodied Dubai’s opulence. The chocolate bar quickly gained attention for its elegant design and use of gold, perfectly reflecting the city’s reputation for luxury.

Dubai chocolate bar recipe

Equipment

  • Thermometer
  • Chocolate bar mold (make sure to use a deep one)
  • Pan
  • Spatula

Ingredients:

  • 7 oz. (200g) high-quality dark or milk chocolate
  • 3.5 oz. (100) kataifi (shredded phyllo dough)
  • 1.7 0z. (50g) pistachio butter
  • 1-2 tablespoons tahini paste (optional)

Method:

  1. Melt and temper your chocolate.
  2. Make sure your chocolate mold is thoroughly cleaned and completely dry.
  3. Pour half of the melted and tempered chocolate into your mold, ensuring it evenly coats the entire surface with a thin layer. Tap gently to release any air bubbles.
  4. In a pan, cook the kataifi with butter until golden and crunchy. Let it cool.
  5. In a bowl, mix the cooled kataifi with the pistachio butter and tahini paste until fully combined.
  6. Pour the kataifi mixture into the mold over the first set layer of chocolate, spreading it evenly while leaving space for the final top layer of chocolate.
  7. Pour the final layer of tempered chocolate into the mold, tap it gently to release any air bubbles, and refrigerate for 30 minutes, or until fully set.
  8. Once set, gently remove the chocolate bar from the mold.

If you really want to kick it up a notch, decorate the chocolate with gold leaf (or maybe a sprinkle of chopped pistachios if that is more your style).

Enjoy your homemade Dubai chocolate bar!
