Homemade chocolate peanut butter cups recipe
Ingredients:
- 1 cup peanut butter
- 1/4 teaspoon salt
- 1 1/2 cups powdered sugar
- 12 oz. dark chocolate, chopped
- 2 tablespoons coconut oil
Method:
- Prepare a cupcake tin with 12 liners.
- In a mixing bowl, stir together the peanut butter, salt and powdered sugar until they are fully incorporated into a smooth mixture.
- To temper the chocolate, melt together 8 oz of the dark chocolate and coconut oil in either a double boiler or microwave, stirring occasionally until just melted and smooth. - Add 1 to 2 tablespoons of chocolate in the bottom of each cupcake liner. Tapping the tin on the counter will help spread the chocolate.
- Spoon 1 to 2 teaspoons of the peanut butter mixture on top of the melted chocolate.
- Cover each peanut butter scoop with more chocolate and smooth out the top.
- Refrigerate for 1 hour or until chocolate has hardened.
- Remove peanut butter cups from the liners and store them in an airtight container in the fridge.
