Chocolate wafers are a popular baking ingredient. They are larger than traditional chocolate chips and are often used to create pockets of chocolate throughout your finished baking product. They can be used in recipes for chocolate chip cookies, very chocolatey brownies, and much more.

What are chocolate wafers?

Chocolate wafers are round, flat chocolate drops generally made from high-quality chocolate.  They are higher in cocoa butter content which means they will melt much faster in the oven.  

Chocolate wafers come in milk, dark, and white chocolate. They are typically sold at grocery stores and baking supply stores, and you can also make your own chocolate wafers at home

Chocolate wafers are meant to accentuate chocolate flavor while adding a more varied texture to baked goods compared to traditional chocolate chips since they have a different melt profile. 

Are chocolate wafers the same as chocolate chips?

Chocolate wafers and chocolate chips are similar, but they are not exactly the same.  Let us explain…

Have you ever noticed something unusual about chocolate chips?  When you bake with them in the oven, they don’t lose their shape!  Chocolate chips are small, uniform pieces of chocolate that stay intact when heated. They are higher cocoa solids and they also include stabilizers to help them maintain their form during baking. For this reason, chocolate chips are commonly used in cookies, muffins and other baked goods.

Chocolate wafers, unlike chocolate chips, are discs of chocolate that are larger and squatter than chips and do not include the same stabilizers. They will melt more quickly than chips and create larger pockets of chocolate in baked goods.  They are often used in recipes where a more pronounced chocolate flavor and texture are desired.

While chocolate chips and chocolate wafers are similar and can often be used interchangeably in recipes, there are some important differences between the two that affect their use in baked goods.

When using chocolate wafers in your baking, consider the size and melting properties of the chocolate to ensure the best possible results. For example, chop larger wafers into smaller pieces for even distribution throughout your recipe or choose a higher quality chocolate that melts more evenly and creates a smoother texture.  It’s also important to note that as the wafers melt, their fat will start to mix with the other ingredients in your recipe and change the texture of your treat.  This is particularly true with chocolate chip cookies, which are discussed in more detail in our cookie blog post.
