What is FrischSchoggi chocolate?

FrischSchoggi chocolate, translates to “fresh chocolate” in Swiss German. It is a Swiss delicacy renowned for its high quality and unique presentation. Unlike typical industrial chocolate bars, FrischSchoggi is often handcrafted and made from the finest ingredients, resulting in rich flavors and a smooth, melt-in-your-mouth texture. FrischSchoggi is molded in large slabs and usually packed with nuts, dried fruits or other decadent inclusions.  Pieces are cut or broken from the slab per order and the shards are sold by weight.  It’s celebrated for its freshness and artisanal preparation, making it a beloved treat among chocolate enthusiasts.

What’s the origin and history of FrischSchoggi?

The story of FrischSchoggi is closely linked to Switzerland’s broader chocolate tradition, which dates back to the 19th century.

Swiss chocolatiers have been leaders in the chocolate industry for a long time. In the late 1800s, Swiss pioneers like Daniel Peter and Henri Nestlé developed milk chocolate, and Rodolphe Lindt invented the conching process, which greatly improved chocolate’s texture and flavor. These innovations paved the way for premium chocolate products like FrischSchoggi.

FrischSchoggi is a more recent addition to this tradition, focusing on the freshest ingredients and artisanal craftsmanship. It is typically made in small batches and sold in specialty chocolate shops, often directly from chocolatiers. This method ensures that each piece of FrischSchoggi maintains its top-notch quality and fresh taste, setting it apart from mass-produced chocolate.

Today, FrischSchoggi is celebrated not just in Switzerland but around the world. It’s admired for its exceptional quality and the dedication of the chocolatiers who make it. Where to buy FrischSchoggi?

FrischSchoggi, being a specialty Swiss chocolate, is typically available in select chocolate shops, gourmet food stores, and sometimes directly from artisan chocolatiers. 

Where to find some FrischSchoggi chocolate:

  • Läderach: Läderach chocolate is freshly made in Switzerland from bean to finished product. You can find a variety of FrischSchoggi chocolates in their physical stores or online, which have expanded into a variety of US cities. From milk chocolate with whole roasted hazelnuts to dark chocolate with whole almonds, and fruity white chocolate – there’s something to delight every palate.
  • Chocolatiers and Specialty Chocolate Shops: Look for boutique chocolate shops in Switzerland or international locations known for their artisanal chocolates. These shops often carry a variety of Swiss chocolates, including FrischSchoggi.
  • Local Gourmet Food Stores: High-end grocery stores or gourmet food stores that specialize in imported foods may stock FrischSchoggi, particularly in areas with a strong demand for premium chocolates.

Dark Chocolate Raspberry and Pink Peppercorn FrischSchoggi Recipe

Our mission is to simplify chocolate-making to make it more accessible. For this one, the CocoTerra machine will handle the tricky process of processing and tempering the chocolate, making it easy for you to create your own FrischSchoggi chocolate right in your kitchen! In the meantime, here’s the traditional way to make FrischSchoggi chocolate at home.

Ingredients:

  • 7 oz (200g) dark chocolate (70% cocoa or higher), chopped
  • 2 oz (55g) freeze-dried raspberries
  • 1 tablespoon pink peppercorns
  • Small baking tray or pie pan

Method:

  1. Chop the dark chocolate into small, uniform pieces to ensure even melting (using a serrated knife will minimize flying chocolate bits).
  2. Prepare the freeze-dried raspberries by breaking them into smaller pieces using your hands or a knife.
  3. Crush the pink peppercorns lightly using a mortar and pestle or a spice grinder.
  4. Place ⅔ of the chocolate in a dry, microwave-safe bowl.
  5. Put the bowl in the microwave and microwave for 15-second intervals.
  6. Stir the chocolate with a spatula in between each 15-second blast until all of the chocolate is just melted (so do not overheat the chocolate as it can burn).
  7. Pour in the remaining chocolate and stir until all the pieces have melted. Your chocolate should now be tempered.
  8. Quickly stir in half of the crushed freeze-dried raspberries and crushed pink peppercorns. Mix well until all ingredients are evenly distributed.
  9. Line your  baking sheet, tray or pie pan with parchment paper.
  10. Pour the chocolate mixture onto the parchment paper, spreading it out into an even layer with a spatula.
  11. Tap the tray gently on the counter to smooth out the chocolate and remove any air bubbles.
  12. Sprinkle the remaining crushed freeze-dried raspberries and pink peppercorns on top.
  13. Place the tray in the refrigerator for about 15 minutes, or until the chocolate has set completely.
  14. Once the chocolate is firm and set, remove it from the refrigerator.
  15. Use a sharp knife to break the chocolate into irregular pieces or shards.
  16. Serve and enjoy!
